Dalma: An Identity of Odia Cuisine and Culture



Odia cuisines are very popular in India. One such popular Odia cuisine is Dalma. It is not just a dish, but a cultural identity of the state. The dish, typically made from dal and vegetables, is used a temple food as well as home food. It is quite nutritious, less oily and less spicy. It has multiple health benefits, especially useful for gastro-related problems. 
 
The preparation of Dalma is very simple and not so time consuming, hence making it one of the most favored dishes of youths dealing with hectic work schedule. It is generally made from toor dal and contains chopped vegetables like green papaya, unripe banana, eggplant, pumpkin, gourd etc. It is garnished with turmeric, mustard seeds, and panch phutana. . There are several variations of this dish. However, the format of making dalma is same. 

The dish is so popular in eastern India, particularly in Odisha that one may find several hotels across the state with the name 'Dalma'.  The food is well tasted and highly respected. Those who know cooking, naturally know how to cook Dalma in Odisha.
